  • 4 large eggs, separated
  • 100g golden caster sugar
  • 500g mascarpone cheese
  • 50ml Baileys Irish Cream
  • 300ml strong coffee (made with 2 tbsp coffee granules + 300ml boiling water)
  • 175g sponge fingers (ladyfingers)
  • 25g dark chocolate, for grating
  • 2 tsp cocoa powder, for dusting

Instructions

  1. Make the Creamy Mixture
    • In a large bowl, whisk egg whites until stiff peaks form.
    • In another bowl, whisk egg yolks and sugar for 5 minutes until thick and foamy.
    • Add mascarpone and Baileys to the yolk mixture, whisking until smooth and streak-free.
    • Gently fold egg whites into the mascarpone mixture with a metal spoon to keep it light and airy.
  2. Layer the Tiramisu
    • Pour cooled coffee into a shallow dish.
    • Dip sponge fingers in coffee for a few seconds (don’t let them get soggy!) and place in a single layer in a 20 x 15 cm dish (use about half the fingers).
    • Spread half the creamy mixture over the sponge fingers.
    • Grate most of the dark chocolate over the cream.
    • Repeat with another layer of coffee-soaked sponge fingers and the remaining cream. (Optional: pipe the top layer for a fancy look.)
  3. Chill and Serve
    • Cover and refrigerate for at least a few hours, ideally overnight, to set.
    • Before serving, dust with cocoa powder and grate the remaining chocolate on top.
