- 50ml Baileys Irish Cream

- 175g sponge fingers (ladyfingers)
- 25g dark chocolate, for grating
- 2 tsp cocoa powder, for dusting
Instructions
- Make the Creamy Mixture
- In a large bowl, whisk egg whites until stiff peaks form.
- In another bowl, whisk egg yolks and sugar for 5 minutes until thick and foamy.
- Add mascarpone and Baileys to the yolk mixture, whisking until smooth and streak-free.
- Gently fold egg whites into the mascarpone mixture with a metal spoon to keep it light and airy.
- Layer the Tiramisu
- Pour cooled coffee into a shallow dish.
- Dip sponge fingers in coffee for a few seconds (don’t let them get soggy!) and place in a single layer in a 20 x 15 cm dish (use about half the fingers).
- Spread half the creamy mixture over the sponge fingers.
- Grate most of the dark chocolate over the cream.
