Ingredients
- 2 cans (15 oz) cannellini beans
- 6 cups mixed greens (kale, spinach, chard)
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup vegetable broth
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Fresh parsley for garnish
- Parmesan cheese for serving

Instructions
- Caramelize the onions: Heat olive oil in a large skillet over medium heat. Add sliced onions and cook 8-10 minutes until deeply golden and caramelized.
